Mandarin Spinach Salad


MANDARIN SPINACH SALAD WITH POPPY SEED DRESSING

  1 lb. fresh spinach, stemmed and torn into bite size pieces
  1 (11 oz.) can mandarin oranges, drained
  1/4 lb. bacon, crisply cooked and crumbled
  1 lg. avocado, sliced
  1/4 med. size red onion, sliced into thin rings


DRESSING:

  1/4 c. white wine vinegar
  4 tsp. sugar
  2/3 tsp. dry mustard
  2/3 tsp. salt
  2 tsp. fresh lemon juice
  2/3 c. vegetable oil
  1 tbsp. poppy seeds

Combine vinegar, sugar, mustard, and salt in blender or
processor; mix well. Add lemon juice. With machine running,
gradually add oil. Stir in poppy seeds. Pour dressing over
salad; toss gently to coat. Serve immediately. About 6
servings.
