- SWEET PORK
4lb pork shoulder roast
1 C pace picante sauce
2 C Brown Sugar
2 1/2 C Coke
Salt & Pepper to Taste
1/2 C white sugar (added at end)
In separate bowl, mix picante and brown sugar and wisk until sugar is dissolved.
In crock pot cover roast with picante/sugar mixture and add coke.
Place on med heat, cover and simmer. Check every hour to rotate in juices.
Once roast starts to fall apart, add white sugar and continue cooking.
6-8 hrs total time depending on how soon roast falls apart.
If appears too juicy, turn slow cooker down to lowest setting and cook w/o lid.
Serve as pork salad or burritos.
*I like to do it in my oven better (325-275 degrees), but only if I'm going to be home all day. Also, I think it cooks and shreds better with a "bone in" roast.*
